She was loved and cherished by many people including: her husband James Simmons; her children, James, John, Barbara and Mary-Liz; her siblings, Tom, Mae, Sean, Bernadette and Margaret; her siblings' children, Felicia, Cindy, Anne, Kathy, Sheila, Caroline, Leslie, Sandra, Jane, Killian, Mairead, Cara, Connor, Niall and Elizabeth; and her grandchildren, Kyle, Meghan, Kara and Erin.

Elizabeth devoted countless hours to charity work at Franklin General Hospital, South Nassau Communities Hospital, and as a pre-school aide at Bright Star.
